I am a beginner riding instructor, with a focus on dressage and horsemanship. Activities?

I teach kids from ages five to thirteen that are just beginning to ride. I have only been teaching three years, so I haven’t learned all the fun ideas yet! I am looking for some fun activities I can do with my kids as summer approaches. We do egg and spoon, etc. Any ideas? Any help would be appreciated!
I always loved pole bending! Most of gymkhana is geared towards a western style, but they are great for teaching balance and form. Also, when done right, really shows the kids how the use of their legs can help maneuver a horse.–builds those muscles, too!

i went to horse camp over spring break, and it was the BEST week of my life. it was from 9 to 5 and we only rode about an 45 minutes a day. we learned more than just how to ride, we learned how to groom the horse, feeding, watering and graining, all the supplements. but the most important thing i learned was not to over work the horse. so when your thinking just one more lap, think about the horse. we did this activity to show us just how hard the horses have it. we (the campers) had a horse show. we had three catogories(3 gate, 5 gate, speed) we had to keep our arms high above our heads like the horse is supposed to hold its head, we had to pick our feet up high. we had to have the correct lead and remember to park out when we came to the center. it was soo much fun but VERY tiring. i have never complained about not riding alot since.
