For a little bit of everything, get the USPC D Manual. You might want to follow up with the C manual once you're past the basics.

For dressage I suggest Dressage Today magazine. I think it's very useful. But honestly you can find a lot of very useful and thorough articles online, free.

I would recommend the beginning level Pony Club manuals. They cover a wide variety of subjects including stable management and riding technique. Centered Riding sounds like a good buy, as well.

You also could subscribe to a magazine called Young Rider. I subscribed to them when i was first starting out and I loved it!
